Brain Boost Salad w/

Lemon Dressing

Ingredients for Salad

2 cup dark leafy arugula

1/2 cup blackberries

1/4 cup raw walnuts, chopped

1/2  cup Farro (cooked)


Lemon Vinaigrette

1/2 tsp lemon zest

2 Tbsp fresh lemon juice

4 Tbsp extra virgin olive oil

Sea Salt and Fresh Ground Pepper to taste



Cook farro according to directions. Whisk vinaigrette ingredients in the bottom of a salad bowl. Combine all salad ingredients except walnuts with dressing. Top with chopped walnuts and enjoy.
